I wanted...I'm so happy to have found this post. I wanted to make Spare Ribs <b>Adobo</b> — not Estaufao — and Maria Puno Ravela's recipe for Pork Adobo was PERFECT!! The only "tweak" I did was to increase the garlic because I like my adobo garlicky. My family absolutely loved the ribs, extra garlic and all.
